Your next pasta night requires no noodles 🍝 @zmargotz’s Creamy Cabbage Pasta swaps them for tender roasted cabbage ribbons, tossed with eggs and tangy Greek yogurt and finished with shaved Parmesan for an easy, healthy meal.

Comment ‘RECIPE’ to have the details sent to your DMs and keep tagging #feedfeed for a chance to be featured.

INGREDIENTS:
1 small head green cabbage, cored and thinly sliced into ribbons
1 tablespoon olive oil, plus more as needed
Kosher salt, to taste
Freshly ground black pepper, to taste
1 large egg
1/3 cup liquid egg whites
1/4 cup plain Greek yogurt
Freshly shaved or grated Parmesan cheese, for serving

RECIPE:
1. Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper.
2. Spread the sliced cabbage on the baking sheet. Drizzle with the olive oil, season with salt and pepper, and toss to coat. Use a second baking sheet if needed to avoid crowding.
3. Roast for 15–20 minutes, tossing halfway through, until tender with lightly browned edges.
4. Meanwhile, whisk together the egg and egg whites in a bowl. Season lightly with salt and pepper.
5. Transfer the roasted cabbage to a large nonstick skillet over medium-low heat. Add a small drizzle of olive oil if needed to prevent sticking.
6. Pour the egg mixture over the cabbage. Cook, stirring and folding gently, until the eggs are fully set, about 3–5 minutes.
7. Remove the skillet from the heat and let stand for about 1 minute. Fold in the Greek yogurt until evenly combined.
8. Transfer to a bowl and finish with Parmesan and additional black pepper. Taste and adjust the salt before serving.
