SUJIKO // It might look like ikura, but these darker, slightly smaller, delicious little spheres are actually called sujiko: immature salmon roe still attached to their sac, or skein. Since the eggs are still in tact, they’re more delicate and have a slightly sweeter, more pure taste when compared to ikura (the same roe but seasoned and separated). Topped with Osetra caviar and fresh wasabi, this was a heavenly little bowl of sweet & salty burts 😋 Have you tried Sujiko?
