I’ve stopped respecting breakfast hours. 😂

I’ve eaten this for breakfast, lunch, dinner AND dessert. The sweet apples, tart cranberries and cinnamon make this the best oatmeal I’ve ever eaten. Not even kidding. 🤎

Comment RECIPE for the full printable recipe + my cranberry variation notes!

CROCKPOT OVERNIGHT APPLE CRANBERRY OATMEAL
Serves 6 | 6-quart slow cooker

• Nonstick cooking spray
• 1 cup traditional steel-cut oats
• 4 cups water
• ½ teaspoon salt
• ¼ cup packed light brown sugar
• 1 teaspoon cinnamon
• ¼ teaspoon nutmeg
• 3 medium apples
• 1 cup fresh cranberries, rinsed and sorted
• 2 tablespoons salted butter, divided into 3 pats
• 1 teaspoon vanilla extract

1. Generously spray a 6-quart slow cooker. Add oats, water, salt, brown sugar, cinnamon and nutmeg. Stir.
2. Peel and core apples, leaving them whole. If spiral-sliced, gently press them back into their original shape.
3. Nestle apples upright in the oats. Scatter cranberries around them and place one butter pat on each apple.
4. Cover and cook on LOW for approximately 7 hours, until oats are tender and the fruit mashes easily.
5. Add vanilla. Gently mash apples and cranberries directly in the pot, then stir thoroughly.
6. Turn off heat and rest uncovered for 5–10 minutes. Serve with milk or cream, maple syrup, toasted pecans or orange zest.

IMPORTANT: Use traditional steel-cut oats, not quick-cooking steel-cut, rolled or instant oats.

This version is softer and looser than my original apple oatmeal because of those delicious cranberry juices. That’s part of what I LOVE about it! Keep the tested water amount, stir and let it rest before judging consistency.

Save this for a cozy holiday breakfast that cooks while you sleep. 🍎
