Jollof is a West African dish and there are tons of variations on how it’s cooked and served!
I was missing the taste of my mother’s cooking… so here is my Salone (Sierra Leone 🇸🇱) Jollof dish inspired by the “sonday kukhri mi mama de mek fo fambul” (the Sunday meal my mother makes for family). Traditionally, the rice is served with chicken or some kind of meat with vegetables, stew and plantain but I wanted to have mine with cod and hot pepper.
