Saying ✌🏽 to summer with some of my favorite cooks of the season in no particular order.
1: lasagne with two different kinds of sauces. One was made with a bolognese sauce and the other a simple marinara. Both filled with this Parmesan fondutta that is now gonna be a staple.
2. Spaghetti alla chitarra with a creamy sungold tomato sauce and breadcrumbs
3. Spaghetti alla chitarra Cacio e Pepe. This was probably my easiest Cacio e Pepe to date with the Parmesan fondutta sauce.
4. Corn Agnolotti. Words can not describe how much I loved making this dish. The filling was made with charred corn, roasted chilis and onion. This was probably my favorite dish of the season.
5. Eggplant parm. Hoagie rolls made with leftover pizza dough have been the call this season. Loved taking my Italian sandwiches to Citi Field. Eggplant parm was made with a spicy pomodoro and eggplant so thin that it was nice and crispy with the perfect texture.
6. Margherita pizza with sauce made from fresh tomatoes from the farmer’s market. Blessed to live in the east coast August - September. Godly tomatoes, buffalo mozzarella, basil
