Move over pickled red onions!!
The delicious tang of pickled red onions—but packed with probiotics!
I can never quite pick a favorite ferment, but this one is definitely a top contender! 🧅✨

Notes:
🧅To make the brine, dissolve 1/2 tablespoon non-iodized salt per 1 cup of filtered water.

🧅 Add garlic cloves, black peppercorns, or your favorite herbs for an extra flavor boost!

🧅 No airlock? No problem! Use a regular lid, loosening it and retightening it daily to release any gases.

🧅 A fermentation weight or something simple like a cabbage leaf to keep the onions submerged in the brine is key to preventing mold.

🧅 The longer they ferment, the tangier and richer in probiotics they get—I love them after about 9 or 10 days!

🧅 Once fermented, switch to a regular lid and store in the fridge for up to 1 year.

🧅For maximum probiotic benefits, add them to your meals after cooking. Heat can destroy some of the beneficial bacteria.

Happy Fermenting!

Hi I need help. I am fermenting purple cabbage. Same recipe. Day 3. I open jar daily to release pressure, it opens with a POP and bubbles coke to surface. I fear the jar will burst. So today I threw some water out of it. Is it too stuffed? Any tips? Should I let it be. ? The bubbling is normal?

You actually don’t have to retighten it daily. You can just start off with a loose lid (as long as it’s a mason jar), and the gases released from the fermentation process will push the oxygen (which can cause mold when it’s touching the veggies after initial fermentation finishes) out. I’ve been fermenting this way for about 15 years and it always works, as long as you have 2% salt by weight and you pound the salt into the veggies before sealing them up.
