Portugal is a bread lovers country 🍞🥖🥪 So it’s no wonder there are a few traditional recipes to make use of leftovers bread 💡
“Açorda” is one of those dishes and it was perfect to not waste a few ends of sourdough bread that were almost as hard as rocks 😅
This recipe is traditionally done with head on shrimp which are a little harder to find in New York. Instead of the shrimp heads, I used the skin only to make a light fumet. I also steamed part of the shrimp instead of clams in the varoma while making the fumet. Win win! Tomorrow I’ll have shrimp ready to eat in another meal. Maybe I’ll make shrimp salad 😋
It’s amazing how just from shrimp, bread, olive oil, garlic, cilantro, salt, and pepper flakes you create such a flavorful dish 😋
