Seasons ending and bananas 🍌 past their prime can only mean one thing: gourmet snack time! We’re entering the final countdown of our Funky Bunky journey for the season. I’m not ready to quit just yet, but Mother Nature says it’s time! CHOCOLATE BANANA CAKE (adapted from prettysimplesweet.com) INGREDIENTS: ∙ 4 overripe bananas ∙ 1/2 cup brown sugar ∙ 1 tsp vanilla ∙ 1/2 cup softened butter ∙ 1/2 cup orange juice ∙ 3 tsp cinnamon ∙ 3/4 cup yogurt ∙ 1 and 2/3 cups flour ∙ 1/2 cup cocoa powder ∙ 1 tbsp baking powder ∙ 1/2 tsp baking soda ∙ 1/2 tsp salt ∙ 1/2 cup chocolate chips, plus more for the top INSTRUCTIONS: 1. Preheat the oven to 350°F and line a pie plate with parchment paper. 2. In a blender, mix the overripe bananas, brown sugar, egg, butter, vanilla, yogurt, cinnamon, cocoa powder and orange juice. Blend until smooth and well combined. 3. Combine the dry ingredients in a mixing bowl (flour, baking powder, baking soda and salt). 4. Pour the blended mixture into the dry ingredients. 5. Add the chocolate chips and mix just until evenly combined. 6. Pour the batter into the parchment-lined pie plate and bake for 35–40 minutes, or until a toothpick inserted into the centre comes out clean. Enjoy!
