A couple of days ago, I took a photo of what I called my “empty nester lunch.“ For the record: homemade potato salad on a bed of spinach.
My three daughters said, “That’s just a regular lunch, mom.”
Not true, but the why behind that is another story.
Today, i’m eating a “late, back-to-back-deadlines lunch,” - albeit with fresh dill mixed in, because I am, after all, Latvian. Dill goes with everything.
I also sliced up half a tomato – also with dill.
These embellishments are something my youngest daughter, Dārija, would do - just for starters.
She’d say without saying, “Who eats mac & cheese straight up?”
I guess that means this is, after all, an “empty nester lunch.” I’m adding extras like Dārija, which brings her closer to me.
