Saudi Desserts 🇸🇦

Dessert doesn’t always wait until the end of a meal in Saudi Arabia. Bread, dates, ghee and honey come together in sweet dishes eaten for breakfast, while filled pastries and syrup-soaked sweets mark holidays and family gatherings.

In Najd, hininy is a winter staple; in Hejaz, apricot-rich dibyaza is associated with Eid al-Fitr. Many of these desserts are shared with neighboring countries and the wider Middle East, with recipes and names changing across borders. This is a selection of sweets enjoyed in Saudi Arabia, rather than a claim that every dish originated there.

Broccoli Cheddar Chicken Pot Pie with puff pastry crust 🥦🧀Day 5 of 6 in our 11th annual Sally’s Pie Week #sallyspieweek

Comment SEND and we’ll dm you the full recipe with instructions, notes, storage, make-ahead and freezing tips, plus 50+ pie recipes from all 10 years of Sally’s Pie Week. It’s all linked in my bio now, too @sallysbakeblog

-4 Tbsp (56g) unsalted butter
-¾ cup (98g) diced yellow or sweet onions
-1½ cups (195g) diced carrots
-4 garlic cloves, minced
-1 1/4 tsp salt
-1/2 tsp freshly ground black pepper
-⅛ tsp ground nutmeg
-½ cup (62g) all-purpose flour
-1½ cups (360g/ml) chicken broth
-1½ cups (360g/ml) whole milk
-8 oz (226g) sharp cheddar cheese, freshly shredded
-1 lb (454g) cooked chicken, cut into bite-sized pieces
-12-16 oz (340-454g) broccoli florets, cut small
-1–1.5 sheet frozen puff pastry, thawed but still cold (about 245–368g)
-egg wash (1 egg whisked with 1 Tbsp milk)

1. Preheat oven to 400°F (204°C).

2. In a large cast-iron braiser or skillet, melt butter over medium heat. Add the onions and carrots and cook, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and cook, stirring, for 30 seconds.

3. Add the flour, salt, pepper, and nutmeg, and stir until the flour coats the veggies and no dry flour remains. In a slow and steady stream, pour in the chicken broth and then the milk. Whisk until no flour lumps remain, then simmer over medium-low heat until thick, about 10 mins.

4. Turn off heat. Stir in the cheese, chicken, and broccoli. If your pan is not oven-safe, transfer the filling to a lightly greased casserole dish.

5. Unroll the thawed puff pastry sheet(s). With a lightly floured rolling pin, lightly roll the puff pastry into a square or rectangle that’s around 1/8-inch thick. Using a pizza cutter or a sharp knife, cut into squares or rectangles about 2.5–3 inches in size. Arrange the puff pastry pieces, overlapping, on top of the filling. Brush with egg wash.

6. Bake for 30–35 minutes, or until the puff pastry is deeply golden and puffed.

7. Cool10 minutes before serving.
