Last week I had an opportunity to travel to Goa, India and learn about Coconut Feni. There are similarities with our Lambanog in the Philippines. Same coconut sap (though there are other different varieties of palm trees used for Lambanog production), same natural fermentation, same roots in tradition. But where lambanog leans clean and sharp, coconut feni keeps that wild, vegetal, earthy, slightly funky character, kind of reminds me of lighter Agricole rum.

Big thanks to @fazendacazulo for hosting and showing us the craft behind it—truly special to experience it from the source.
