Crispy Hot Honey Dijon Chicken Thighs
Low effort, high reward type of night.
Golden crispy chicken, sweet heat from the hot honey, that Dijon bite… and veggies that basically marinate themselves in all the goodness.
What you need:
6 bone-in, skin-on chicken thighs
1/3 cup hot honey
1/3 cup dijon mustard
1/3 cup lemon juice
3 tbsp minced garlic
2 tbsp olive oil
Dash of maple syrup
Italian seasoning
Red Pepper Flakes
Cowboy butter seasoning (Kinders)
Salt + pepper
Potatoes (cut into 1-inch cubes)
1 onion, julienned
Butter (for finishing)
How to make it:
Marinate the chicken in hot honey, dijon, lemon juice, garlic, olive oil, maple, and seasonings for about 2 hours.
Heat your oven to 425°F. Toss your potatoes and onions on a sheet pan with salt and pepper. Nestle the chicken right on top and let all that marinade drip over the veggies — that’s where the magic is.
Roast for 35 minutes. Then brush the chicken skin with melted butter + a little more cowboy butter seasoning and roast another 10–15 minutes until the skin is deep golden and crisp.
It comes out sticky, caramelized, a little spicy, a little tangy… and the potatoes are honestly just as good as the chicken.
(Juices are so good you’ll want to soak it up with some toasted sourdough…I did that and game changer)
Save this one. You’ll make it more than once 🔥
