Every cup of coffee tells a story, and one of the most important chapters is the processing method. Coffee processing significantly influences flavor, aroma, body, and overall cup character.

1. Natural Process is the oldest and most traditional method, where coffee cherries are dried whole under the sun. Because the bean remains inside the fruit throughout drying, it absorbs sugars and compounds from the cherry, resulting in a cup that is often fruit-forward, sweet, complex, and full-bodied.

2. Honey Process offers a balance between Natural and Washed methods. After harvesting, the outer skin is removed, but a portion of the sticky fruit mucilage remains on the bean during drying. This process creates a coffee profile with enhanced sweetness, balanced acidity, a smooth body, and layered complexity.

3. Washed Process focuses on clarity and consistency. The fruit pulp is removed before the beans are washed and dried, allowing the intrinsic characteristics of the coffee itself to shine. The result is typically a clean, bright, and crisp cup with vibrant acidity and a clear expression of origin.

Three classic processes. Three distinct flavor stories. One origin. Which profile speaks to your palate?
