Na puri, na vada… Jharkhand ka apna breakfast superstar, DHUSKA! 🔥❤️ 📍 Dhuska & Kala Chana — Ranchi, Jharkhand I first tasted Dhuska at Bhola Dhuska in Ranchi, and instantly understood why this humble dish means so much to Jharkhand. Made with rice and dal batter, lightly fermented and fried till beautifully puffed, it is rispy outside, airy inside! Served with spicy kala chana-aloo sabzi, green chutney and roasted chilli. 🤌 From roadside breakfasts to family celebrations, Dhuska is more than just food. It's a little piece of home for every Jharkhandi. ❤️ This Diwali, we recreated it in our kitchen to feed everyone around in office. And honestly, that's what makes regional food so special, the joy of sharing it! Jharkhand walon, ab aapki baari! 👇 Ranchi, Jamshedpur, Dhanbad… where do we get the BEST Dhuska? And what makes your family's version special? Dhuska . 1 cup Rice, soaked overnight 1/4 cup Urad dal, soaked overnight 1/3 cup Chana dal, soaked overnight 2 inch Ginger, peeled 3 Green chilies Salt to taste & blend everything into a smooth paste Pour the batter into a large bowl & ferment for 2-3 hours . 2 cups Kala Chana 3 cups Water Preasure cook for 30 mins 1 tbsp Mustard oil 1 tsp Jeera 1/4 tsp Hing 1 cup Onions, chopped Sauté till translucent 1 Green chili, chopped Mix well 1 tsp Coriander powder 1 tsp Red chili powder 1 tsp Garam masala powder Mix well 1 cup Tomatoes, puréed Mix well & cook till the oil is separated Kala chana, boiled 2 Boiled potatoes, diced Salt to taste Cook for about 15 minutes A handful of Coriander, chopped Look at that 😍 . For the Spicy Chutney 1 cup Coriander, chopped 1/2 cup Mint Leaves 8-10 Green chillies 1 inch Ginger, peeled 1/4 cup Raw mangoes, chopped Blend everything together 😋 . Fermented Batter Salt to taste 1 tsp Jeera 1/2 tsp Hing 1 tsp Jeera 1 tsp Coriander powder 1 tsp Red chili powder 1 tsp Chaat masala powder Mix well Pour a ladle full of the batter in medium hot oil & fry till GBC🔥 . For Assembly . Fried Dhuska Kala channa Spicy Coriander Chutney Roasted Green chilly Delishaaas 🤌😋
