Proof that a slow burn is worth it?👀
My favourite meal to make for hosting… braised Short Ribs
Ingredients for short ribs:
- Short Ribs (4 medium-large ones)
- 5 Celery (Chopped)
- 3 Carrots (Peeled and Chopped)
- 2 Yellow onion (Chopped)
- 1 bottle dry Red Wine (cheaper the better)
- Beef Stock 2 1/2 cup
- 1 large spoon full Tomato paste
- 1/4 Worcestershire Sauce
- 2 Heads of garlic
- Rosemary
- Thyme
- Oregano
- Parsley
- Salt and Pepper
- 3 tbps Butter
- Olive Oil
1. Preheat oven to 350 degrees
2. Trim off fat on the ribs
3. Heavy handed with salt and pepper-pat into the ribs
4. Add oil to Dutch oven over medium high heat, then add ribs and sear each side for about 2 minutes. Remove and place in bowl on the side once browned on each side
5. Add a bit more oil to the Dutch oven. Add tomato paste and roast for 3 min.
6. Add your chopped celery, carrots and onions sauté for approx 5 minutes or until they start getting some colour
7. Deglaze your dutch oven with the beef stock and Worcestershire. Stir this for approx 10 min until the stock about 30% reduced
8. Add in your bottle of wine, fresh herbs, and garlic heads (cut in half)
9. Add ribs into the Dutch oven, cover with lid, place in oven for approx 2 hours and 45 minutes or until they start falling off the bone
10. When ribs are done, take them out of the Dutch oven and set them aside in a bowl
11. With a mesh strainer pour the liquid through into a bowl, you can discard all the veggies you’ve strained out (save your garlic heads for the mashed potatoes)
12. Add the liquid that you strained into a sauce pan, and reduce on medium heat for about 30 min constantly stirring until a syrup like consistency
13. Add your butter into the sauce and stir until completely melted and glossy looking
14. Add your ribs into the pan of sauce drowning them in the sauce
15. Serve on garlic mashed potatoes (use the garlic you cooked in the pot) and garlic green beans
