15-minute Black Bean Noodles! One more plant-based high-protein meal to add into your weekly rotation. Save the below ⬇️ We make this at least once a week, it’s such a wholesome meal, packed full of fibre and plant protein (28g protein, 17g fibre per portion) Ingredients (this recipe is also available on my web app with 200+ more, check it out at the link in bio or find out more on the second pinned post at the top of my page!) πŸ₯° 1 x 400g tin organic black beans 1/2 tbsp white miso paste 4 spring onions, white and green parts finely chopped 3 cloves garlic, minced 1/2 a fresh red chilli, deseeded and finely chopped 1 thumb sized piece of ginger, grated or minced 1.5 tbsp soy sauce or tamari Juice of one large lime 250g dried noodles (I used spelt ramen) To serve: Drizzle of runny tahini Green parts of the spring onion Sliced cucumber Roasted peanuts Chilli oil or Shichimi Method: In a small bullet blender, add the black beans, juices and all, and the miso (if you’re using jarred beans or beans that have already been salted - only use 1 tsp of miso) Pulse a few times to break down the beans and combine the miso, you DO NOT want a smooth paste, you’re looking for something chunky! Set aside. Cook the noodles according to the packet instructions. Once cooked, drain, rinse, and set aside. Drizzle over a little sesame or olive oil, to stop them from sticking or clumping together. In a small saucepan, heat a dash of sesame / any neutral or olive oil on a low-medium heat. Once shimmering, add the white parts of the spring onion and a small pinch of sea salt. Cook off for 3-4 minutes, stirring regularly. Add the garlic and chilli, fry for 2 further minutes, then add the ginger. Fry for 1-2 minutes more, then pour over the soy sauce / tamari and mix well. Add the blended miso black beans, stir everything together, then turn off the heat, squeeze over the juice of one lime, add the noodles and combine with tongs. Serve into bowls with a generous drizzle of runny tahini on top, green parts of the spring onion, roasted peanuts, sliced cucumber and chilli oil / Shichimi. #15minmeals #beans #easyhealthyrecipes #protein
To my friend, my sister and soulmate, I wish we could go for one more run. I wish you could get mad at me one more time for leaving the key in the door. I wish I can give you one more hug. I wish we could stay up late one more time for endless chats and laughs. I wish I could help you out of your shoe one more time after a hard tracksession. At first I didn’t know what to write and if I wanted to write anything. A lot of things have been said already and they make me cry and smile at the same time. It does show what you meant to people whilst being so humble about that. Your legacy will be lived on. You showed me what kindness is and how you have to make time for everybody. From the young kid that looks up to you, to the older people that needed a ride to a pharmacy. You gave me a second family and a second home and I will be forever grateful of that. You gathered so many amazing people around you from different parts of your life and you would have been so happy to see us all sit together having a drink at the GA club yesterday. You always called it luck that we have met each other, but after all those years of having a deep rooted friendship I think it was destiny. It hurts to think about the future but I know you will be there every step of the way. Love to the moon and back ❀️
The moment. The goal. The celebration. 😎
