We have been making the same Margherita since 1870. This month it gets something new on top.

Acorn-fed Jamรณn Ibรฉrico from @cincojotas, laid over the top the moment it leaves the oven, so the heat softens the fat into the mozzarella. Naples and Jabugo, on one plate.

We are calling it the 5J Margherita Royale. On the menu now in Hollywood.

Friday the 11th, a full leg carved by hand at the table from 6pm. Come early, it goes quickly.
