Homemade Cajeta for ep.1 of my “Edible Gift” series. Cajeta is a goat’s milk caramel and something I grew up eating. It truly is a DELICACY and in my opinion, the perfect edible gift. This recipe yields 8-8oz jars. You will have a little extra leftover for yourself! Comment “shop” and I’ll send you details on the CUTEST little bow!! Tip: If it crystallizes do not panic. It is VERY easy to bring back. All you have to do is return it to a saucepan with 2-3 tbsp of water and bring to a light simmer for the crystals to melt. If you add the glucose syrup it will not crystallize. Ingredients: 6 qt goat milk. 8 cups sugar. 3 tsp baking soda. 1 vanilla bean (seeds and pod). Pinch of salt. 6 tbsp glucose syrup (optional but it prevents crystallization). Directions: 1. Add the goat milk to a large pot with the sugar, salt, vanilla, baking soda and glucose (if using). 2. Bring to a simmer, mixing every 2-3 min. You want it to reach about 210F. Stir often so it doesn’t boil over. This process will be about 40-45 min. 3. The color will slowly change and once it turns a light caramel tone you want to start stirring more often so it doesn’t scorch at the bottom. This will take about 45 min. 4. Once the cajeta turns deep caramel color and it starts to thicken, you will need to mix with a spatula consistently until it fully coats the back of the spatula. The whole process for this amount of goats milk takes about 3-3.5 hrs. 5. Turn heat off, let it cool and divide in your jars. Store in the fridge. #Ediblegifts #cajeta #caramel
