Wayne had to work late tonight so I decided to surprise him with something I’ve been wanting to try and it turned out SO good! He prefers everything over rice, but I loveee noodles, and especially udon … so I served both! Are you team rice or team noodle? Comment SUBSTACK any time for a link to the full length recipes, recipe cards and shopping list on our Substack “Nancy & Wayne” This is a quick and easy, delicious dish. RED CURRY UDON SOUP WITH CRISPY PORK + BOK CHOY 3 lb ground pork (can be swapped w/tofu or ground beef) 1 tsp dark soy sauce 1/3-1/2 cup minced onion 1/4 cup minced shallot 2 tbsp minced ginger 2 tbsp minced garlic 1/2 cup red curry paste About 20 oz coconut milk 4-6 cups chicken broth 1-2 Tbsp Fish sauce, adjust to taste Juice of 2-4 limes, to taste Frozen udon noodles Bok choy, halved blanched Eggs, as many as you’d like Chili oil @momofukugoods Sliced scallions Cook the pork in a stainless steel pan over high heat without adding salt or oil; it will render its own fat. Leave it undisturbed until crispy on the bottom, then flip it. Only after flipping, drizzle with the dark soy sauce and crisp the other side. Remove from the pan. Work in batches if needed so it crisps rather than steams. Saute the onion, shallot, ginger and garlic in the same pan for a few minutes. Add the curry paste and cook, stirring, for 1-2 minutes. Pour in the coconut milk and chicken broth and simmer for 5-7 minutes. Add the fish sauce and lime juice gradually, tasting as you go. Everything can be adjusted to taste. For the jammy eggs, bring a pot of water to a boil. Gently lower in as many eggs as you’d like and cook for exactly 6 minutes. Run under cold water, then peel and halve. Cook the frozen udon according to the package directions and blanch the halved bok choy until tender-crisp. Put the udon in a bowl, pour over the broth, then add the crispy pork, bok choy and jammy eggs. Finish with chili oil and scallions. You can also serve it over rice instead of udon. #udon #curry #soupseason #crispypork #easyrecipe @allclad

What is Mutton Kundan Kaliya? Mutton Kundan Kaliya is a royal Awadhi dish that originated in the kitchens of Lucknow’s Nawabs, who were famous for their luxurious food. The word Kundan means pure gold, while Kaliya refers to a traditional meat curry. The dish is known for its beautiful golden colour, which comes from ingredients like saffron and turmeric. In some royal preparations, edible gold leaf was also used to decorate the dish, making it a symbol of wealth and grandeur. What makes Mutton Kundan Kaliya special is its delicate flavour and rich, silky gravy. Unlike the spicy mutton curries we commonly eat, this dish focuses on subtle aromas and slow cooking. Tender pieces of mutton are cooked with yoghurt, ghee, fried onions and fragrant spices, sometimes with saffron and kewra water. The beauty of this dish lies in the patience and skill required to prepare it, making it a wonderful example of Lucknow’s royal culinary heritage.
40,000 OF YOU!!! 😭🎂🖤 I don’t even know where to begin!! 10 months ago, I started this account with ZERO followers, a big goal (that seemed rather crazy at the time), and absolutely no idea how much my life was about to change. I was 39, raising two little girls, working a career I’d been in for 15 years, and wondering if I could actually build something of my own. And here we are. 🥹 40 years old. 40,000 followers. And I somehow turned something I started in the middle of motherhood into my full-time career. But can I tell you what has meant the MOST to me?! The women I’ve met along the way. The friendships, the conversations, the messages from women who decided to go after something because they watched me do it first. THAT is the part I never saw coming. 🥹 To every single one of you who has followed along, left a comment, shared a reel, sent me a message, or cheered me on along the way, THANK YOU!!! I hope this is your reminder that you’re not too old, too busy, or too late to start something new. And for those of you who have been asking how I grew this account from zero, I put everything I learned into The Momentum Method! Just comment METHOD and I’ll send it your way. 🖤 And if you’re new here, HIIII!! I’m so happy you’re here!! Here’s to 40K and everything that’s still ahead 🙌🏼 Pull up a chair. You belong here. 🖤 @thatmodernlife 🖤 @thatmodernlife 🖤 @thatmodernlife #iggrowth #StartingOver #MillennialMoms #ContentCreatorJourney #WomenSupportingWomen
