Girlfriend, yes you can put potatoes and carrots in adobo. Mexican menudo is NOT the same as Filipino menudo and adobo is a seasoning in Mexico as opposed to the name of the food dish in Filipino.

I’ve seen some Filipinos put whole hard boiled eggs in adobo to be braised along side the adobo. But the rest…. No lol. I’ve seen onions but that’s about all the veggies I’ve seen added. I’m not Filipino though so there’s that. Could this be some kind of regional thing? Anyone? 😅

Seen some add hardboiled eggs into it and its not bad , carrots and potatoes would sound more like afretada maybe

You can add eggs, potatoes, even coconut milk. Just the carrots I am not sure of. Depending on where you are from, there is A LOT of adobo varieties

Not sure about potatoes and carrots, but a medium to hard boiled egg in adobo actually sounds really good. It would taste similar to adjitsuke eggs in ramen 🍜
