Cranberry Pecan Goat Cheese Beet Bites:
INGREDIENTS
Roasted beets, sliced into rounds — 4 medium (about 600g / 1.3 lb)
Goat cheese log — 8 oz (225g)
Fresh or frozen cranberries — 1 cup (100g)
Honey — 3 tbsp (60g)
Orange juice — 2 tbsp (30ml)
Pecan halves, toasted — 1/2 cup (60g)
Fresh thyme sprigs — small handful
Balsamic glaze — 2 tbsp (30ml)
Salt and black pepper — to taste
Olive oil — 1 tbsp (15ml)
INSTRUCTIONS
Slice roasted beets into 1-inch thick rounds and pat dry.
Slice goat cheese log into rounds matching the beet size.
In a small saucepan, simmer cranberries, honey, and orange juice for 8-10 minutes until thickened into a compote.
Place a goat cheese round on top of each beet slice.
Spoon warm cranberry compote generously over each cheese round.
Press 2-3 toasted pecan halves into the compote on each bite.
Tuck a small thyme sprig or a few leaves into each stack.
Drizzle balsamic glaze over the top of each bite.
Season lightly with salt and pepper.
Arrange on a wooden board or platter and serve immediately.
PRO TIPS
🥜 Toast pecans in a dry pan for 3-4 minutes before using — it deepens the flavor dramatically
🧀 Let goat cheese sit at room temp for 10 minutes so it slices cleanly without crumbling
🍯 Reduce the cranberry compote until it coats the back of a spoon — too thin and it slides right off
🔪 Pat beet slices completely dry before stacking or the layers will slip
⏱️ Assemble no more than 30 minutes before serving so the beets don't bleed color into the cheese
