When I saw rain in the forecast for Halloween in Phoenix this year, I tried to remember a rainy Halloween from childhood, but I couldn’t. I texted my parents asking if it had ever rained and they said they didn’t remember there ever being rain. So then I looked it up. It hadn’t rained in Phoenix on Halloween since 1987. Sure enough it hadn’t ever rained in my lifetime because I was born in 1988.

And sure enough, it rained tonight for the first time in 39 years. It also rained in 1985, but before that it was 1957. It had only rained 11 times in the 130 years that they have on record - tonight makes 12.

All night I wondered if all the parents walking with their kids tonight would be the white haired elderly folks by the next rain and our children will be the ones accompanying their children trick or treating - trying to figure out how to do it in the rain. Or maybe it will rain next year. Who knows!

I bought umbrellas today because we didn’t even own one ☔️

@foodwithhardt’s Crispy Cheesy Potato Stacks are a delicious addition to your Thanksgiving appetizer spread 🥔🧀 With golden, crispy edges and melty cheese between the layers, each bite is rich, savory, and full of flavor.

INGREDIENTS (makes 12 stacks):
4 small-to-medium yellow potatoes
Olive oil
Salt & pepper
Onion powder
Garlic powder
Italian seasoning
Grated pecorino romano (or parmesan)
Shredded smoked gouda (any melting cheese works!)
Fresh thyme

DIRECTIONS:
1. Use a mandoline to thinly slice the potatoes (about 1/8-inch thick).
2. In a large bowl, toss the potato slices with olive oil, salt, pepper, onion powder, garlic powder, and Italian seasoning. Add a generous handful of grated pecorino and mix until evenly coated.
3. Layer about 6 slices per stack and place them into a nonstick muffin tin. (Grease the tin with olive oil or butter if needed.)
4. Bake at 400°F (200°C) for 20 minutes.
5. Remove from the oven, sprinkle with shredded gouda and fresh thyme, then bake for another 20 minutes — until golden, crisp, and cheesy perfection.
6. Let cool slightly before removing from the pan. Serve warm and enjoy!

Welp, never thought I’d experience this at 5 weeks postpartum & so glad everyone is recovered, & we are back to normalcy. Flu A is TERRIBLE😭 It was hands down one of our toughest weeks as a family. Usually when anyone’s sick, we do lots of cuddles and ride it out together. This time, much different since we have a newborn and it’s very important to make sure they don’t catch fevers or we would have to go to the hospital. So hubs and I did everything possible (probably overboard) to keep this virus from spreading and making sure our sweet newborn doesn’t catch it. Lots of air hugs, air kisses & everything else. The overboard worked, we are finally in the clear and wow… what a week. Sharing as it is flu/cold season incase this helps anyone! #breastfeeding #parents #fluseason #newborn #postpartum
