My granddad, Gordon Louis Briggs, died this morning, just a couple of days before his 95th birthday. He was a difficult man and I didn’t always have an easy time with him but I will miss him still.

ONE POT CREAMY PUMPKIN SAUSAGE PASTA (gf, df)✨Nobody would know this creamy, decadent pasta is gluten free and dairy free. It’s everything I want in a hearty but healthy fall dinner — veggies, healthy fats, and lots of protein in a creamy, dairy-free sauce. You’ll want to make this again and again! Feel free to sub another type of sausage or just use ground chicken or pork.

Ingredients:
1 lb sweet Italian chicken sausage
2 tablespoons avocado oil
1 small onion, diced
2 large carrots, diced
2 ribs of celery, diced
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 tbsp nutritional yeast
1 tsp salt
1/2 tsp pepper
1 teaspoon Italian seasoning
3/4 cup pumpkin puree
3 cups chicken bone broth
1 (13.5oz) can coconut milk
8oz gf pasts (shells, elbows, etc.)
large handful of spinach, chopped

Instructions:
In a large skillet, heat 2 tablespoons of avocado oil over medium heat until shimmering.
Add the sausage and cook for 3-5 minutes, breaking it up into small chunks as you go, until evenly browned with no visible pink.
Add the onion, carrots, and celery and cook for 4-5 minutes until softened.
Add the garlic, sun-dried tomatoes, Italian seasoning, nutritional yeast, pumpkin puree, salt and pepper and cook for another minute.
Stir in the broth and coconut milk and bring to a boil. Add the pasta, stirring to incorporate. Reduce heat to low and simmer for 15 minutes, stirring occasionally.
Stir in the chopped spinach and remove from heat.
Serve and enjoy!
