Beef & Broccoli
1.5 lbs chuck steak, cut in thin strips and across the grain
1 large broccoli crown, cut into bite sized pieces
1 tbsp ginger paste
3 cloves garlic, chopped
2 stems green onions, cut into 2 inch pieces
Sesame seeds, for garnish
White rice, to serve
Sauce:
2 Tbsp oyster sauce
2 Tbsp soy sauce
1/4 cup water
2 tsp black pepper
2 tsp brown sugar
1 tsp sesame oil
Marinade:
1 tsp baking soda
1/2 tsp white pepper
2 Tbsp oyster sauce
2 tsp cornstarch
1 tbsp garlic powder
2 tbsp water
2 tsp soy sauce
2 tbsp oil
1. In a small bowl, combine the marinade ingredients and mix until well incorporated.
2. Add the thinly sliced chuck steak and toss until the beef is evenly coated. Let it marinate for 30 minutes to 1 hour.
3. While the beef marinates, blanch the broccoli in boiling water for 30 seconds, then immediately transfer it to an ice bath to stop the cooking. Alternatively, place the broccoli in a microwave-safe bowl and microwave for 3 minutes.
4. Once the beef has finished marinating, heat a pan over medium heat. Sear the beef for 3–4 minutes, or until nicely browned.
5. Add the ginger, garlic, and green onions. Sauté for about 30 seconds, until fragrant.
6. Pour in the sauce and cook for another 2–3 minutes, or until the beef is fully cooked and the sauce has thickened slightly.
7. Add the prepared broccoli and toss until evenly coated in the sauce and heated through.
8. Serve over steamed rice and garnish with sesame seeds.
