Seattle-Style Salmon with Tostitos® Scoops!®
Makes: About 30-40 bites
Prep: 20 minutes, plus 15-20 minutes to marinate
Bake: 8-10 minutes
Ingredients:
◽️1 bag Tostitos® Scoops!® Tortilla Chips (215 g)
◽️400 g skinless, boneless salmon
Marinade:
◽️2 tbsp soy sauce
◽️1 tbsp maple syrup
◽️1 tsp freshly grated ginger
◽️1 tsp sesame oil
Toppings:
◽️1 avocado, cut into very small cubes
◽️Finely sliced green onion, optional
◽️Crumbled roasted seaweed, optional
◽️Sesame seeds, optional
◽️Spicy mayo, optional
◽️Thinly sliced jalapeño, optional
Instructions:
◽️Pat the salmon dry and cut it into small, even cubes, about ½ inch (1 cm).
◽️Mix the soy sauce, maple syrup, ginger, and sesame oil. Add the salmon and gently toss to coat. Refrigerate for 15-20 minutes.
◽️Preheat the oven to 400°F. Arrange the Tostitos® Scoops!® tortilla chips on a parchment-lined baking sheet. Remove the salmon from the marinade, letting the excess liquid drip off, and fill each chip.
◽️Bake for 8-10 minutes, until the salmon is cooked through. Check at 8 minutes so the chip edges don’t brown too much.
◽️Add a few small avocado cubes to each bite. Finish with any combination of green onion, seaweed, sesame seeds, spicy mayo, and jalapeño, if desired. Serve right away.
