Chermoula rack of lamb, fire-grilled 🔥
Finely chopped coriander, parsley, garlic, cumin, smoked paprika, lemon and olive oil, then vacuum sealed with the rack and frozen flat. It marinated while it froze, then rode 1,500 km from Stockholm to Bad Kissingen in the van fridge as its own ice pack. Sear, over charred wood low heat to 52-54°C, rest 10 minutes.
