It’s Mac and cheese season so here’s a repost of Bradley’s @thenewethics.exe Mac and cheese recipe! Products we used: @daringfoods Buffalo chickn @violife_foods cheddar and Colby @kitehillfoods sour cream @earthbalance butter 1) Preheat oven to 400F. 2) Cook pasta al dente. Drain and rinse with cold water. 3) Add pasta to ceramic dish. Add a large spoonful of sour cream and mix in until covered. 4) Mix in cooked/chopped buffalo chicken to pasta. 5) Add 2 bags of vegan cheese to a food processor or blender, and blend until no large pieces remain. Set a handful of cheese aside for topping. 6) Make the roux. Heat 3 tbsp of vegan butter in a large pot. Once melted, add 3 tbsp of flour and whisk until fully incorporated. Let cook for a few minutes. 7) Slowly add 3 cups of plant milk (~1/2 cup at a time), whisking milk fully into roux before adding more. 8) Add cheese and seasonings (salt, pepper, onion powder, garlic powder, paprika, cayenne pepper, nutritional yeast). Adjust seasonings to taste. Cook until cheese is melted into the mixture. 9) Pour the cheese sauce into the pasta and stir to fully coat. Once enough sauce is added, using the remaining cheese set aside earlier to top. 10) Bake for 20mins covered with tin foil. Remove foil and bake for 20 minutes. Use the last few minutes to broil until browned.
