Nashville Hot Chicken Mac & Cheese 🧀 Recipe ⬇️ Ridiculously creamy four-cheese mac and cheese with a crispy golden cheese crust, topped with crunchy fried chicken coated in a spicy Nashville hot oil! Mac & Cheese 16 oz cavatappi pasta 4 tbsp butter 4 tbsp flour 12 oz evaporated milk 1 cup heavy cream 1 cup whole milk 12 oz Colby Jack 8 oz sharp cheddar 8 oz mozzarella 4 oz Fontina 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika ½ tsp cayenne pepper 1 tsp Dijon mustard ½ tsp chicken bouillon Salt & black pepper Reserved pasta water Fried Chicken 2 lb chicken tenderloins 2 cups buttermilk 2 tbsp hot sauce 2 cups flour ½ cup cornstarch 1 tbsp paprika 1 tsp each garlic powder, onion powder & cayenne Salt & black pepper Oil for frying Nashville Hot Oil ½ cup hot frying oil 2 tbsp cayenne pepper 1 tbsp brown sugar 2 tsp smoked paprika 1 tsp garlic powder 1 tsp chili powder ½ tsp black pepper ½ tsp salt Directions Cook pasta 1–2 minutes shy of al dente. Reserve 1 cup pasta water. Melt butter, whisk in flour and cook 1–2 minutes. Slowly add evaporated milk, cream, milk and seasonings. Simmer until slightly thickened. Reduce heat to low and melt in 16 oz of the shredded cheese. Reserve the other 16 oz for layering. Fold in pasta, adding reserved pasta water as needed to keep it extra creamy. Layer half the mac in a baking dish, add 6 oz reserved cheese, then remaining mac and 10 oz cheese on top. Bake uncovered at 350°F for 20–25 minutes, then broil 1–3 minutes until golden and crispy. Marinate chicken in buttermilk and hot sauce for at least 30 minutes. Mix flour, cornstarch and seasonings, then coat chicken thoroughly. Fry chicken at 350°F for 4–6 minutes until crispy and 165°F internally. Combine Nashville hot oil spices in a heatproof bowl. Carefully pour ½ cup hot frying oil over the spices and stir until combined. Brush or toss the fried chicken in Nashville hot oil, then pile it over the baked mac and cheese.
