Taco editor José Ralat heard tales of a northeast Texas food tradition from friends who grew up in the area. Most explain it like Christi Schambach: “I remember our parents told [my siblings and I] to put the butter in our salsa because we thought it was too hot. It kind of helped take the heat down.” When she moved to Houston, she was taken aback by the absence of Parkay on Mexican-restaurant tables. Friends teased her. “It is the weirdest thing, but I crave it,” she said.

What’s the deal with squeezing Parkay into salsa? And what did Ralat think when he tried it himself? Read the story at the link in our bio (and raise a 🤚in the comments if you’re a butter-in-your-salsa kind of Texan).

East Texan here 👋🏻 butter goes in the tortilla. Then dip the tortilla into salsa. No real Texan puts butter in their salsa…even though I’ve seen it done 🫣
