v4 - thundrafrumunda🌩️ i beach whaled the mantle then got my high foot lol. more flexibility to get high left foot would’ve been a lot smoother. right hand at the top felt great to side pull on, but once you get above it, it can feel a bit spooky.

🍗 Psst! Who fancies homemade Nando's-style chicken without spending ages in the kitchen? 😍

If you're short on time but still want something packed with flavour, these juicy Peri Peri chicken tenders with a buttery Nando's-inspired sauce are an absolute winner! Easy to make and perfect for a midweek meal. ❤️

For the chicken:

- 500g chicken tenders or fillets
- 1 tsp chilli powder
- ½ tsp turmeric
- 1 tsp peri peri powder
- 1 tsp paprika
- 1 tsp black pepper
- 1 tsp mixed herbs
- 1 tsp nigella seeds
- 3 tbsp Nando's Peri Hot Marinade

Mix everything together and leave to marinate in the fridge for 30 minutes.

To cook:

Pan method: Heat 3 tbsp oil in a pan, add the chicken, cover and cook over a medium heat until cooked through and most of the moisture has evaporated.

Oven method: Place the chicken on a foil-lined baking tray, drizzle with oil and bake at 180°C for approximately 25 minutes, or until fully cooked.

For the buttery Peri Peri sauce:

- 40g butter
- 2 tbsp single cream
- 3 tbsp Nando's Hot Peri Peri Sauce
- 3 tbsp Nando's Lemon & Herb Sauce

Melt the butter over a low heat, stir in the cream and both sauces. Heat through for 2 minutes, then pour generously over your chicken.

Serve with spicy rice, naan or a portion of chips. Honestly, you can't go wrong! 😋

👇 Spicy Rice 🍚

3 tbsp oil
1 & 1/2 cups rice
1/2 red onion
1/2 red & 1/2 green pepper
1/2 cup peas
4 tbsp Nandos peri or hot sauce
1 tsp ginger garlic paste
1 tsp paprika
1/2 tsp red Chilli
1 tsp turmeric Powder
1 tsp cumin Powder
1 veg/chicken Stock Cube in 1 pint boiling water

In a pan, add oil, throw in onions, and cook until soft. Add ginger and garlic, chilli powder, ground cumin, turmeric powder, paprika, nandos peri, or hot sauce and salt.
Mix and then add in the peas, peppers, and stock.
Add in rice and cook until done. Perfect to serve as a side dish.
