Too old for concerts? New episodeeeee out now! On youuuuutubbeeee with the amazing @michellebuteau

Korean fried chicken is not Korean, and it is not American either. It is both, and the dates are not in dispute.

Frying chicken arrived with American soldiers in the 1950s. The first Korean chicken shops opened in the 1970s. The sauce and the second fry came in the 1980s. So the bird is borrowed and the technique is not.

That technique is the whole dish. Potato starch instead of flour. Fried twice, with a rest in between so the steam gets out. Sauced after it comes out of the oil, never before.

That is why it is still crunchy ten minutes after the sauce goes on, which no other fried chicken manages.

Comment CHICKEN and I’ll send you the recipe and both temperatures. And tell me whose version you grew up on.

New & Noteworthy, Episode 3: My Secret Weapon for Holiday Dressing ✨

My secret weapon for holiday dressing — It’s not more sparkle — it’s texture. Lace, taffeta, tulle, tweed, and sequins: five new pieces and five ways I’m wearing them this season. And then there are the shoes: metallic or velvet, and even the simplest outfit looks planned.

Which look is your favorite? Tell me below — and comment TEXTURE and I’ll send you all the links.
