« Alinéa a bénéficié des dispositions Covid » En faillite en 2020, l’enseigne d’ameublement Alinéa, détenue par la famille Mulliez, a pu être sauvée grâce à une ordonnance exceptionnelle adoptée pendant le Covid. Une "aubaine" pour les dirigeants qui ont pu déposer le bilan et racheter ensuite leur propre entreprise, effaçant au passage une dette de près de 180 millions d’euros… Dans cette opération, 17 magasins ont fermé et près de 1000 salariés ont été licenciés. 👉 "Auchan, Décathlon ... FOSSILIZED Red Prawn, Chimichurris, Empanada It started with a new toy called the “Slimmer” and chef @douglasalley and my shared fascination for fossils. We began to process everything we could in the machine, manipulating textures, intensifying flavors, and changing the visuals of raw ingredients. After much trial and error, we landed on shrimp. It is visually stunning, the way a fossil might emerge from Patagonia’s ancient earth, and delicious. The crunchy texture and flavor are similar to traditional Southeast Asian prawn crackers that use pureed meat and shells to intensify the briny, umami-richness of the heads. The guests brush edible powders into the empanada, sweeping flavor into the sauce. The tool kit contains a palette knife to excavate the prawn head and discover the flavors of green and red chimichurri, sesame, plantain, bone marrow, and blue corn humitas cooked in plantain skins buried in the fire. #alinea

To the investors who believed, my mentors, the writers that supported, and every team member past and present who helped shaped Alinea with your hands, minds, and hearts. Thank you. To our guests who trusted us with your celebrations, your memories, and your wonder. And to all of the collaborators that helped us tell a story far larger than food. Thank you.
