Lunch at this cozy Obanzai restaurant never disappoints. Obanzai is traditional Japanese home-style cooking, served in small seasonal plates. Each dish highlights fresh ingredients and balanced flavors. In this photo, you can see a variety of options prepared for lunch. My personal favorite is Niku Doufu (beef tofu). The soft tofu absorbs the savory broth, and the beef melts in your mouth. It’s comforting, simple, and deeply satisfying. When I guide guests around Japan, I enjoy taking them to places like this—local restaurants where you can truly experience everyday Japanese food culture. #KyotoFood #Obanzai #JapaneseHomeCooking #LocalExperience #EatLikeALocal #KyotoGuide #JapanFood #FoodieJapan #TravelJapan #HiddenKyoto #KyotoTour #AuthenticJapan #KansaiFoodie #PrivateToursKyoto #KyotoAdventures #FoodTourKyoto #JapaneseCuisine #KyotoEats #NikuDoufu #TraditionalJapaneseComfortFood
Basic Dashi: Kombu & Bonito Concept The golden broth made from kombu and bonito shines with deep umami and a rich aroma. It draws out the full potential of each ingredient and forms the foundation of all Japanese cuisine. Japanese cooking values the art of bringing out the natural umami of ingredients. Faithfully prepared according to tradition, this broth represents the essence of Japanese food culture. Its flavor is delicate and refined, born from a harmony with nature. ——————————— Discover Wabi — the Japanese philosophy of food and culture. Rainy day today so it's time to bust out the Japanese comfort food. You ever had Wakame rice before?
Sometimes places go viral for a reason. The food was so good, and the atmosphere was fantastic. That’s the huge 750g of rice with egg stuffed with eel and unagi on top. Get reservations or prepare to wait a long time. You can scan a QR outside to also pay to skip the line a bit, but reservations are the way to go. These guys are in such high demand that they buy about 10 kg of eel every morning. Our entire meal for 5 including drinks and appetizers was basically a steal. @izumo_ikebukuro #unagibowl

No student of Yoshitake San *doesn't* serve awabi with sauce of its own kimo. This dish has become so uniquitous these days that it's almost been forgotten as a Yoshitake signature. This was a fantastic kuro-awabi from Futagami island off Kyushu.

🧑‍🍳🧑‍🍳🧑‍🍳 🍳 Cuisine: Japanese cuisine 👨‍🍳 Chef’s Notes: I found ten horse mackerel for 390 yen and the price was too good to pass up. 🐟💴 Since this size can be a hassle to prep for fried aji I just removed the guts and turned all of them into nanbanzuke instead. 🍋✨ Nanbanzuke keeps well too which is always a bonus. I do love aji fry but honestly I also just really love nanbanzuke on its own. 😆💛 It goes perfectly with rice and it is amazing with sake as well. 🍚🍶 If you are not a fan of strong vinegar flavors you can make it milder by adding a bit more sugar. I always make this by eye so the recipe below is not super precise but I hope it is still helpful. 🙏 🍽️ Dish: Marinated Fried Horse Mackerel (Nanbanzuke Style) 📝 Ingredients: Horse mackerel about 10 🐟 Small onion 1 🧅 Early red onion 1/2 Carrot 1/3 🥕 Green pepper 1 Red pepper 1 Green chili 2 🌶️ Vinegar 300cc Rice flour 120g Soy sauce 30cc Sugar 30cc Salt a little 🧂 Pepper a little
