Thank you @soupedup_recipes for another amazing recipe 🤍
Comment “orange” and I can DM you the recipe!
Prepare the chicken
- Cut up 0.5-0.75 lb of chicken thigh or breast
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 2 Tbsp of fresh squeezed orange juice
- Mix everything in with the chicken until all the liquids are absorbed. - - Cover and let it sit in the fridge for 30 minutes.
Make the batter
- 100 g of corn starch
- crack 2 eggs and beat well
- Slowly pour egg into the corn starch, mix well until it becomes a smooth shiny yellow batter
Pour the marinated chicken into the batter, mix well, make sure every piece of coated.
Heat about 2.5 cups of oil (I used peanut oil) to 360 F, drop in the chicken pieces, don’t crowd the pan, and make sure the chicken does not stick together. Remove from oil when you feel the surface of the chicken is getting hard. Do this in 2-3 batches. Let the chicken rest for 10 minutes.
Let the oil get to 390 F, and put in all the chicken to double fry them. This is the key to makoing sure all the chickens come out crispy. Once the chicken turns into a light golden color, take it out of oil.
Now let’s make the orange sauce
- Heat up your wok with oil
- 1.5 tsp minced ginger
- 1 Tbsp minced garlic
- a few shakes of chili powder if you want spicy
- 1/4 cup of freshly squeezed orange juice
- 3.5 Tbsp of light soy sauce
- 1/4 cup of brown sugar
- 1.5 tsp of orange zest
- 1 Tbsp of honey
- 3 Tbsp of white vinegar
- 1 Tbsp + 1 tsp of corn starch + 1 Tbsp of water mixture
Stir it for abour 2 minutes, let the sauce come to a thicker texture, a bit thicker than syrup, pour in all the chicken, quickly stir and make sure all the pieces are coated well, take them out, top with green oinions, and enjoy!!

Sydney - this is for you. Because we can’t go out to our favourite old school Chinese restaurants right now! 😩 - N x ❤️
.
Built-To-Last Honey Chicken (crispy 4+ hrs once sauced!)
.
CHICKEN MARINADE: 300g/ 10oz chicken thighs (2.5cm/1" pieces), 1 tbsp light soy sauce (or all purpose, NOT dark soy), 2 tsp Chinese cooking wine (sub with soy), 2 tsp cornflour/cornstarch
STAY-CRISPY PUFFY BATTER: 6 tbsp cornflour/cornstarch, 4 tbsp flour (plain/all purpose), 1/4 tsp baking powder, 1/4 tsp salt , kosher/cooking (halve for table salt)
7 - 8 tbsp COLD soda water, club soda or seltzer water (NOT sparkling mineral water)
HONEY SAUCE – simmer 2 min on medium, then keep warm: 1/2 cup (150g) honey, 1.5 tbsp (25g) glucose OR corn syrup (light), 1 tbsp light soy sauce (or all purpose), 2 tsp Chinese cooking wine (or more soy)
CRISPY NOODLES - Fry 25g / 2 oz wad of Vermicelli rice noodles for 3 sec (puffs up instantly!)
.
1. Mix Chicken and Marinade, set aside 30 min. Put 1/2 cup cornflour in bowl, coat chicken, shake off excess, then pile up on plate (coat all).
2. Heat 4cm / 1.7" veg or canola oil in small pot or large saucepan over medium high to 180°C/350°F (or until chicken starts sizzle straight away when dipped).
3. COLD Batter: Whisk to combine flour, cornflour, baking powder, salt. Pour in 7 tbsp cold soda water, mix until JUST combine (few lumps ok). Should be thick enough to coat chicken, not be transparent, not super thick and heavy. If too thick, add extra water 1 tsp at a time.
4. Drop 8 – 10 chicken into batter, coat, cook 3 min until light golden and crispy, drain on rack. Cook rest of chicken, then cool 30 min (meanwhile, make Sauce). Heat oil to 200C/390F, cook chicken in 2 batches (crowded in pot is fine) 90 sec until very golden and super crisp. Drain on rack.
5. Toss in Sauce quickly, pile on crispy noodles, sprinkle with sesame and green onion. Serve!
.
Notes: Make head: cool double fried chicken, fridge overnight. Cool sauce. Bake chicken 180C/350F 7 min on rack, toss in reheated sauce. It’s 99% like freshly made. BREAST: Add 1/8 tsp baking soda into marinade.
