Some dishes simply need time. ❤️🍝 This Short Rib Ragù is one of them. Slowly braised beef short ribs, red wine, tomatoes and aromatic herbs, cooked low and slow until the meat is so tender it practically falls off the bone. In Italy, ragù is more than just a sauce. It’s slow food at its best, a dish that takes time, and that’s exactly what makes it so rich and flavorful. And in the end, there’s only one thing left to add: pasta. Lots of pasta. 😍 Slow cooked. Rich. Comforting. And absolutely worth the wait. Ingredients for 4: • 800 g beef short ribs • 400 g pasta, such as paccheri • 1 onion • 1 carrot • 1 celery stalk • 2 garlic cloves • 1 tbsp tomato paste • 400 g peeled tomatoes • 250 ml red wine • approx. 500 ml beef stock • Rosemary, thyme & bay leaves • Olive oil, salt & black pepper • Parmesan Method Season the short ribs generously with salt and pepper and sear them on all sides in olive oil. Remove from the pot. Add the onion, carrot, celery and garlic and sauté until nicely softened and golden. Stir in the tomato paste and cook briefly. Deglaze with the red wine and let it reduce slightly. Return the short ribs to the pot and add the tomato passata and beef stock. Add the herbs, cover and simmer gently for 3–4 hours, until the meat is incredibly tender. Remove the meat from the bones, shred it roughly and return it to the sauce. Cook the pasta until al dente, then toss it directly with the ragù. Add a little pasta water to create a silky, glossy sauce. Finish with freshly grated Parmesan. Buon appetito! 🇮🇹 #pastapertutti #shortribragu #slowfood #pastalover #comfortfood
French Red Wine Beef & Potato Bake Ingredients: 1 lb beef chuck roast, cut into uniform cubes 3 medium russet potatoes, sliced into thick rounds 1 large yellow onion, sliced into rings 1 cup dry red wine 1 cup beef broth 2 tbsp olive oil Salt, coarse black pepper, and garlic powder to taste Instructions: Braised Red Wine Beef: Heat olive oil in an oven-safe casserole dish. Season the beef cubes and sear them on high heat until browned. Add the sliced onions, then pour in the red wine and beef broth. Cover and braise in the oven at 160°C (325°F) for 2 hours until the beef is melt-in-your-mouth tender. Layer with Potatoes: Remove the dish from the oven and skim off excess fat. Arrange the thick potato rounds directly over the braised beef and onions. Season the potatoes with salt, pepper, and garlic powder. Bake to a Crisp: Return the dish to the oven uncovered, raising the temperature to 200°C (400°F) for 25–30 minutes until the potatoes are tender and golden-brown on top. Serve: Spoon a rich, tender portion of beef and potatoes straight from the baking dish onto a serving plate.
