Kunafa Eid Mubarak to my dearest InstaFam! Hope you all have a beautiful Eid! A little sweet fare after all the heavy feasting. Kunafa is one dish I’m ready to travel miles to Turkey for. I hope it happens someday, until then this is the solution for my craving as none of the store bought Kunafa tastes like this. Kunafa dough 300gms Mozzarella cheese 500gms 1/2 cup sugar 1/2 cup melted butter Tbsp milk A few saffron strands 1 cup water 1 cup sugar Juice of half a lemon Make a simple syrup by boiling water and sugar. Once it boils, add lemon juice and set aside. Cut the Kunafa dough into small pieces. Mix well with sugar, butter and saffron milk for colour. Line an 8 inch cake pan with aluminium foil, mix butter and ghee and coat the pan well. Lay half of the Kunafa dough and press well. Lay in the mozzarella cheese fully. Place the remaining Kunafa dough and press well. Bake in a preheated oven at 200degrees C for 20 minutes. Pour hot sugar syrup over hot Kunafa. And your Kunafa is done! Kunafa is usually made over the stove and hence you wouldn’t get the deep golden colour in the oven. Here is Kunafa from scratch for those interested in making it! Recipe Kunafa dough 300 gms (for 8 inch cake pan) Mozzarella cheese 500 gms Fresh cream cheese- 3 tbsp Powdered sugar - 1/2 cup Melted butter - 1/2 cup Milk - 2 tbsp Saffron 1 pinch Water - 1 cup Sugar - 1 cup Lemon juice - 1 tbsp Ground pistachio - 2-3 tbsp Make a simple syrup by boiling water and sugar. Once it boils, add lemon juice and a pinch of saffron for colour and set aside. Cut the Kunafa dough into small pieces. Mix well with sugar, butter and saffron milk for colour.
