The Palestinian meal that I almost always make when family is visiting. It’s the first meal my mother made me when I was in Nj recently too.
I’d say it is one of the most commonly enjoyed and popular Palestinian dishes.
Makloubeh quite literally means to flip which refers to flipping of the pot onto the serving platter and the upside down rice cake is revealed leaving everyone in excitement.
There are lots of versions to Makloubeh depending on region and what available. My family always prefers eggplant and cauliflower in theirs with tender lamb.
Try it sometime and spread the beauty of Palestinian food with your friends and family.

Vegetarian makloubeh - one of my favorite Palestinian dishes of all time, made meatless!

This is the perfect, satisfying, hearty meal to make for a meatless Monday, during lent, or for a weekend get together. Not only is it beautiful to look at, but it’s savory and delicious. Yes, there are multiple components, but most of them are hands-free (I.e., roasting veggies vs frying).
Serve with a simple salad or a khiyar bil laban (cucumber yogurt sauce) and man you’re in for a heavenly bite.

Traditional Palestinian Chicken Makloubeh
Makloubeh translates to "flipped upside down" in reference to the way the order of ingredients are layered in the pot versus how they look when the pot is flipped. It uses a few vegetables, either interchangeably or mixed together. Eggplants, cauliflower, potatoes & carrots. Some families they add hummus (garbanzo beans).

🇵🇸 Palestinian Maqluba 🇵🇸
I’m new to cooking Palestinian dishes so this is the recipe I came up with after watching loads of videos:
Boil 1 whole cut up chicken in 3 cups of water , add 2 tbsp salt, 3 cardamom pods, 2 bay leaves, 1 cinnamon stick, & 1 star anise. Boil for at least 30 min on low-medium heat.
Fry or bake sliced potatoes, eggplants, and cubed cauliflower. I fry mine in olive oil.
Season 2 1/2 cups of washed basmati rice with 3 tbsp of 7 spice mix, 1/2 tsp black pepper, 1 tbsp salt.
Once the broth is ready. Set aside. Start by layering your vegetables (side note, use nonstick spray or parchment paper if you want to be extra careful so your veggies won’t stick to the bottom). Layer your rice next, and finally pour over 3 cups of broth. Bring to a boil, cover with a lid, and cook on low for 15 min or until rice is fully cooked and has absorbed the liquid.
Let sit for a few minutes and then flip!

Recipe below 🤎 When a people face genocide and land annexation, their culture and traditions are at risk of being stolen and appropriated as well. Arabic cuisine has become so mixed and today was about celebrating our strong Arabic heritage. I made Makloubeh (aromatic rice with chicken and eggplant) with Palestinian and Lebanese Grandmas at @beitsitti in Jordan to keep the culture and traditions alive.
Ingredients
1 Onion
1 medium sized eggplant
1 small sized cauliflower
1 full chicken cut into 6 pieces
2 cups Rice
Turmeric powder
Mixed spice
Beit Sitti Stock Mix
Cinnamon
Salt
Black pepper
Cooking oil for frying
Chicken
1. Wash chicken using water, vinegar, lemon, salt and flour rub then rinse
2. Sear the chicken and add beit sitti stock Mix, whole cinnamon sticks, cardamom pods, cloves, and bay leafs.
3.add a peeled onion and a whole head of garlic in the pot then add boiling water, bring to a boil then let simmer, skim the scum from the top then add, black pepper and salt to give it flavor, take the chicken out of the stock and save the stock to be used in the recipe
4. Peel and slice the eggplant into thick round slices add salt and leave it for 5 minutes until the water comes out of the eggplant, cut cauliflower into smaller florets and wash and dry
5. deep fry the eggplant followed by the cauliflower using vegetable oil until golden
(you can also broil the sliced eggplants and cauliflower after brushing them with olive oil in a large pan)
6. Soak 2 cups of medium grain and long grain rice in cold water for 20 minutes
(Continued in comments)

We haven't had makloubeh for a while now and seeing as the weather has cooled down it makes a perfect comfort meal, there are so many variations of this dish but this by far is my favourite one.
Ingredients for stock
1 kilo diced lamb shoulder trim as much fat as possible
1 beef or chicken stock cube
4 Bay leaves
1 anise star
4 whole cloves
1 cinnamon stick
1/2 tsp peppercorns
1 quartered onion
Rest of ingredients
1.5 cups of medium grain rice
1.5 cups of basmati golden sella rice
1 heaped tsp Lebanese mixed spices
1 sliced and peeled eggplants
2 egg plants cut long ways with skin on
2 sliced tomatoes
1 whole cauliflower cut into small florets
Nuts & parsley to garnish
Method
Cover lamb and all spices in water then bring to boil and let it simmer with the lid half on for 3 hours (longer the better).
Wash rice and soak in cold water 30min before cooking.
Prep eggplant then rub with salt and allow to sit in colander for 30mins before frying them and allowing them to drain on a paper towel, also fry your cauliflower until golden and also allow to drain.
Once the lamb is ready remove and reserve stock.
Strain rice and Mix 1 tsp of lebanese spices and salt.
Layer your ingredients in a deep dish in the following order
Tomatoes
Lamb
Eggplant (long pieces around the rim of the pot and small slices in the center)
Cauliflower
Rice
Then top with 6 cups of reserved stock (making sure rice is covered) bring to a boil then quickly put heat down to low and cook with lid on for roughly 30 - 40 mins making sure juices have been absorbed then allow to rest for 15-20mins before flipping.
Garnish with nuts and parsley optional x
Serve with cucumber and yogurt sauce 😋
Enjoy xx
