Stifado 📍Greece 🇬🇷 ⭐️ 4.3 Video: @marys_kouzina Stifado is a hearty Greek one-pot stew that is ideal for a cold winter's day. Although the ingredients vary from region to region and from cook to cook, the essential ones are large amounts of onions, tomatoes, wine or vinegar, and sometimes garlic. Depending on the region, meat such as goat, rabbit, wild hare, beef, snails, tripe, or octopus can be added to the stew. Others like to add mushrooms or warming spices such as cinnamon, cloves, and allspice. The usage of those spices points to a possible Levantine influence, while the name of the dish is a clear indicator of Italian influence, derived from the word stufato, meaning stewed in Italian. #stifado #tasteatlas

Recipe 👇 Greek Beef Stifado Ingredients ◆ 1 kg ( 2.2 lb ) beef, cut into large cubes ◆ 6–7 pearl onions or shallots, left whole ◆ 100 ml ( about ½ cup ) olive oil ◆ 2 tsp tomato paste ◆ 5 garlic cloves, pressed or grated ◆ 300 ml ( 1¼ cups ) dry red wine ◆ 6–7 sprigs fresh oregano, or 1 tsp dried oregano ◆ 2 bay leaves ◆ 6–7 whole cloves ◆ 1 cinnamon stick, or 1 tsp ground cinnamon ◆ 2 tsp salt ◆ ½ tsp ground black pepper ◆ 1 tbsp balsamic vinegar ◆ 400 g ( 14 oz ) fresh tomatoes, diced, or 1 can chopped tomatoes Instructions 1️⃣ Heat the olive oil in a large, heavy-bottomed pot, preferably cast iron. Add the whole onions and cook until nicely browned on all sides. 2️⃣ Remove the onions and set them aside. Add the beef to the same pot and sear over medium-high heat until deeply browned on all sides. 3️⃣ Add the tomato paste and garlic. Stir well and cook for 2–3 minutes, allowing the tomato paste to caramelize slightly. 4️⃣ Pour in the red wine and stir, scraping up the browned bits from the bottom of the pot. 5️⃣ Add the oregano, bay leaves, cloves, cinnamon, salt, black pepper, and balsamic vinegar. Bring to a simmer and cook for a few minutes, allowing the alcohol to evaporate. 6️⃣ Add the tomatoes and stir well. Cover and simmer gently for about 2½ hours, or until the beef is tender and the sauce has become rich and thick. 7️⃣ Return the browned onions to the pot and gently stir them into the sauce. Cover and simmer for another 30 minutes, allowing the onions to become tender while keeping their shape. Serving Suggestions Serve hot with plenty of crusty bread for soaking up the rich sauce. Stifado is also delicious with rice, roasted or boiled potatoes, or creamy mashed potatoes. A fresh tzatziki or cucumber salad makes a refreshing contrast to the rich, slow-cooked beef. #GreekFood #GreekRecipes #beefstifado

STIFADO ME MANITARIA. You absolutely loved my traditional beef version of Stifado so now let’s explore the Lenten version using mushrooms. Mushrooms are a great ingredient to use when substituting meat, they’re substantial and very filling when cooked in a rich aromatic stew such as this. Enjoy! 1.5 kg mushrooms - sliced in half 1/4 cup extra virgin olive oil Approximately 15 shallots - peeled and kept whole 2- 3 cloves of chopped garlic 1/2 cup red wine 2 sticks of cinnamon or 1 tsp ground cinnamon 6-8 whole cloves 1/2 tsp allspice 3 bay leaves 400g tomato passata 2 cups water Salt and pepper to taste Place your Dutch oven or large pot over medium high heat. Add the whole shallots for approximately 2 minutes until they develop colour then add the chopped garlic. Deglaze then pot with the red wine, then add the tomato and water, along with all the spices then add the mushrooms and stir. Place on lid, completely covered. Turn the heat down to medium and allow to simmer for up to 1.5 hours checking and stirring often and checking seasoning to taste ( stir gently, not to break the onions). Sauce should be rich and thick. @marys_kouzina . #maryskouzina #recipe #greek #greekfood #greekrecipes #food #cooking #dinner
