Rainy weather calls for sturdy lunches, and nothing says comfort like Welsh rarebit. Top tip - make the topping ahead and chill it. That way, it's really easy to handle. We popped ours on a tangle of buttery leeks, and a bit of crispy bacon. But keep it veggie by leaving out the bacon, and switching the Worcester sauce for soy. Now excuse us while we make this on repeat... Serves 2 You'll need: 25g butter 25g flour 1 tbsp Dijon mustard 1½ tbsp Worcestershire sauce, (or a dash of soy sauce if making it veggie) 100ml ale 200g mature cheddar, grated 2 large leeks, trimmed and sliced 8 rashers of steaky bacon small bunch of sage 4 thick slices of sourdough bread butter salt & pepper To make the rarebit, melt the butter in a small saucepan. Add the flour and mix them into a smooth paste. Cook gently for a few minutes until it starts to smell slightly biscuity. Add the mustard, Worcestershire sauce, and ale. Mix well and let it come to a simmer. Throw in the grated cheese and beat it together until the cheese has melted and you have a smooth thick paste. Leave to cool, transfer to a container, and refrigerate until needed. When ready, cook the leeks gently in a frying pan with a knob of butter and pinch of salt for 10 mins or so, until softened but not coloured. In a separate pan, fry the bacon until crispy and tear in the sage leaves right at the end so they fry and crisp up in the bacon fat. Turn your grill to high to preheat. Toast or griddle the bread on both sides and place them on a baking tray. Top each slice equally with the bacon and leeks, Divide the rarebit mix into 4 balls and flatten them out to roughly the shape of the bread. Pop the rarebit on top, give them a turn of pepper, and slide them under the grill until bubbling and golden on top. Serve immediately.

Did you know? 🧀 Welsh rarebit isn’t rabbit at all, it’s actually a rich, savory cheese sauce poured over toasted bread! The name is thought to be a playful jab from the 1700s, when meat was expensive and cheese on toast became the “poor man’s rabbit.” 🐇 #WelshRarebitDay #CheeseOnToast #BritishEats #FoodieFavorites #ComfortFoodGoals #CheesyDelight #SavoryBites #FoodieFun #NationalDaysEats #WouldYouTryThis #Foodfacts

Welsh Rarebit Jacket Potatoes ✨ Did you know this princely dish links back to the Welsh fondness for cheese, specifically "caws pobi", a baked cheese dish from Wales with roots in the 15th century. Later, it was known as "Welsh rabbit", rabbit being a luxury at the time while the Welsh made the most of what they had (ale, cheese, bread) . Welsh rarebit is the version we know and love today and apparently can't get enough of. #halenmon #welshrarebit #cawspobi #stdavidsday #mustard
