Slow Roasted Oxtail Recipe 🍖 This melt in your mouth beefy cut has an intense, rich flavour making it perfect for your next stew or slow cooker dinner. As the collagen breaks down during slow cooking it creates a mouthfeel and depth of flavor that’s second to none! Written recipe below;
- Season the oxtail with salt on all sides and then lightly dust with flour.
- Add olive oil to a large casserole dish and set over high heat.
- Brown off the oxtail and seal on all sides.
- Deglaze the pan with white wine, then add 3-4 bay leaves, fresh thyme, 1 can of quality diced tomatoes and 1L beef stock.
- Place the lid on the casserole dish and place in to a preheated oven set to 160C for 3 hours.
- Remove the roast from the oven and add baby potatoes cut in half.
- Place back in the oven and roast for a further 1.5-2 hours until the oxtail is tender.
- Once the oxtail is nice and tender remove and allow to rest for 20 minutes.
- Serve straight on the table with fresh thyme sprinkled over the top.

Lasagne Soup Recipe
Serves 5-6
- 500g lamb or beef mince
- 3 tbsp oil
- 1 onion
- 1.5 tsp garlic paste or 4 cloves
- 2 tsp onion powder
- 1 tsp garlic powder
- 2 tsp oregano
- 1 tsp ground cumin
- 2 tsp paprika
- 1 tsp hot cayenne powder or chilli flakes
- 1/2 tsp black or white pepper
- 1 tsp salt or to taste
- 1 tbsp tomato purée
- 1 tbsp Worcestershire sauce
- 1 tsp sugar
- 1 can chopped tomatoes (400g)
- 900ml veg or chicken stock
- 350g pasta or lasagne sheets
- 125ml double cream
- 20g Parmesan
- 30g Shredded mozarella
Method:
1. soften onions in oil for 2-3 mins. Add in all spices/seasonings, garlic paste and tomato purée. Cook for 2-3 mins
2. Add ground meat. Break down using back of spoon and keep mixing. Cook on medium-high heat till browned approx 10 mins. Add Worcestershire sauce
3. Add chopped tomatoes and sugar. Cook for further 5-10 mins
4. Add veggie or chicken stock. I used 2 cubes to 900ml boiling water to dissolve for the stock.
5. Add choice of pasta or if using lasagna sheets, break into smaller pieces
6. Cover and allow to simmer on low heat for 10 mins or until pasta is 80% cooked (may need less time depending on shape)
7. Add double cream and Parmesan and mix. Can remove from heat at this point and pasta will cook in residual heat. Taste salt at this point and adjust if necessary. (Better to have less to begin with rather than too much as Parmesan is also salty, you can always add more but you can’t remove it)
8. Add mozzarella cheese if you like and serve.

Beef stew & dumplings 🥘🤤
This is a proper winter warmer, great for the family or just for meal prep!
1. Brown off your pieces of beef in batches, season with some salt and pepper. Then deglaze the pan with some stock, check it isnt burnt and add back to the stock
2. Chop your veg, and add the harder root veg to a big pot and brown off.. then add your softer veggies… with salt & pepper - then add your beef back
3. Then cover with beef stock (i used around 500ml) plus thyme, parsley & bay leaf
4. Roast in the oven 150 degrees c for 2-2.5 hours .. the beef should be soft but still have some muscle connective tissue… OR go lower like i did and do for slightly longer, but this can cause the beef to be more melt in the mouth due to the collagen breaking down into gelatin - i think its just up to you, itll taste banginf either way!
5. When you have around 30 mins left, mix 250g self raising flour and 125g butter (grate cold butter - MUST be cold) and then add water until it forms a ball - split into 4 … you can classicaly use beef suet and add herbs and spices but im cool with it plain!
5. Add the dumplings in and stick the lid on for 20-30 mins, crisp off at the end and you can actually flip halfway through if you wish!
6. Serve up and ENJOY!!!!👊🏻🔥 #beefcasserole #beefstew #winterwarmer

Ad: I’m in love with this California walnut and mixed veg curry - based on one of #mamakhans recipes but with a nutty twist
It’s perfect for the upcoming winter evenings as it’s packed full of fibre, protein and plant omega 3 fatty acids from the California walnuts
During winter these protein packed nuts can help support the body’s immune system
RECIPE:
Vegetable Curry -
Prep: 15 minutes
Cook: 1 hour
Serves 4
4 tbsp olive oil plus 1 tsp
1 tsp black onion seeds
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp chilli powder
1/2 tsp salt
1 tbsp of garlic paste (or 2 crushed garlic cloves)
1 tbsp ginger paste
400ml water
1 onion, chopped finely
4 large tomatoes, chopped
3 carrots, sliced
8 baby potatoes, chopped into quarters
275g frozen peas
250g frozen cauliflower florets
50g California Walnuts
100g spinach leaves, roughly chopped
Basmati rice and yogurt to serve
Heat the oil in a large saucepan, add the black onion and cumin seeds, turmeric, chilli powder, salt, garlic and ginger and stir for 2-3 minutes, then add one cup of water.
Now add the onions and tomatoes and cook for 10 minutes stirring occasionally.
Add the carrots and potatoes, stir and then cook for another 15 minutes, covered.
Add the peas, cauliflower and remaining water and cook for a further 20-25 minutes or until both the potatoes and cauliflower soften and easily break apart.
Meanwhile, toast the walnuts in a frying pan with a tsp of olive oil and then stir them into the curry.
Add in the spinach and cook for a further 1-2 minutes until just wilted. Season to taste
Serve with basmati rice and fresh yogurt for a twist on a classic South Asian dish.
Delicious!!

And that is how you are feeling after jumping into a frozen mountain lake. I have to say I never in my whole life felt that cold. And I also never went that much hiking in winter.👀❄️
But I also have seen and experienced things that I never did before. From all, this was probably my roughest experience. Luckily my sister equipped me with those pocket warmers. Maybe next time I will read the instructions before it’s too late. 🤷🏻♂️😂 Does anyone know how the work?👀
And you remember this adventure? 🏔️
