Introducing @meatmarketbbq
Brisket might not be the best cut for barbecue anymore.
This right here is beef clod.
and some pitmasters think it might actually be better.
just up from King’s Cross at @twotribescampfire , Meat Market BBQ are running the kitchen and putting some seriously impressive Texas-style barbecue on the menu.
Owner Joseph has some strong credentials when it comes to live-fire cooking, and now armed with a 500-gallon smoker he’s setting his sights on carving out a name in London’s barbecue scene.
Their pitmaster plates start from around £60, loaded with smoked meats and all the good stuff you’d expect.
But what really caught my attention was Joseph’s approach.
He’s paying homage to the Texas style of barbecue, but putting his own stamp on it by working with cuts that suit the British market a little better.
Instead of relying purely on brisket, he’s breaking down beef chuck aka clod, smoking the muscles individually to create something really unique meat with the flavour depth of brisket but a texture closer to steak.
It’s seriously impressive cooking, and if this is the beginning for Meat Market BBQ, London’s barbecue scene just got a lot more interesting.
So what do you think is brisket still the king of barbecue, or is beef clod about to take over?
