LINK FOR TICKETS IN BIO 🔗 MENU FOR SABROSO - NOVEMBER 15 TWO-COURSE AND FOUR-COURSE MENU AVAILABLE, PLUS OTHER DRINKS FROM PAST EXPERIENCES AVAILABLE FOR PURCHASE Learn more about the DJs, performers and vendors that will be part of this experience on my previous post. The menu was curated by myself and inspired by my hometown, Bogotá, as well as some of the Colombian regions that I find the most inspiring: Valle del Cauca and Cauca. This region is home to part of my ancestry and a place I was lucky to call home in 2018 and 2019. There, I learned the foodways of this multicultural and biodiverse territory by traveling to its corners, as well as trying and cooking the food of traditional cooks, farmers and vendors that always feed everyone with love, joy and SABOR. BABADO was a multi-course dinner experience inspired by Minas Gerais, a state in the mountains of Brazil, with a few details and flavors from the Amazonian state of Pará. Using ingredients, stories, and knowledge gathered from traditional cooks, markets, and chefs during my travels through these culturally and naturally rich regions, it was a pleasure to curate this intimate experience and bring these references to the table. Many thanks to everyone who attended and collaborated. food i ate in brasil this year by @111ncu
For this multi-course dinner experience you’ll be trying traditional dishes and beverages—as well as modern takes—from the state of Minas Gerais, in the mountains of Brazil. For this project, I visited markets in Belo Horizonte and Ouro Preto, talked to suppliers and brought products they sell, learned from traditional cooks, and cooked and ate with locals. You’ll be able to experience this work at my dining table in Brooklyn on August 7. video by @nathacastillo by @111ncu
Last March I had the honor of producing two different food+culture experiences in Bogotá, my hometown, in collaboration with two very talented locals: plastic artist and educator @ulcy_ and mixologist @mago.astro owner of @lacopadelpatas The first experience, “taller de paisaje comestible” (edible landscape workshop), with @ulcy_ , was a hands on experience that took place at the whimsical @tallercajanegra in which the attendants were welcomed with arepas de sagú and colaciones de maíz, made by traditional baker Carlos Pinzón, from nearby Fómeque, and lulo canelazo with my aunt Liliana’s recipe. Then, with ingredients from the Andes such as coca leaf, Andean blackberries, goldenberries, and more, they decorated their own cakes inspired with landscapes and feelings or states of mind. For the second experience, Picantería Peruana, I joined forces with @mago.astro , and based on my travels to Peru from last year, we created a food & drink menu that emphasized the pre-colombian spirit of Peruvian dishes such as ceviche, in which I used tumbo/curuba instead of lime, and solterito, an earthy and refreshing vegetarian dish from southern Peru. For drinks, Camilo applied all his mixology knowledge to create combinations that included traditional beverages I tried in different parts of Perú such as chicha blanca del Colca, emoliente and chicha morada. picantería peruana flyer: @eldiegotatuajes paisaje comestible flyer: @ulcy_ paisaje comestible photo: @rafael_dv by @111ncu

beautiful experience designing an all-vegan menu for AROUND THE TABLE, the climate week gathering hosted by @yerbamadre @chilli.app and @synergy_social at @rosa_newyork this was a seasonal menu inspired by Arab flavors with Latinx details to remind us of the environmental cost of war and of the food we choose to eat, as well as that there are large groups of people around the world being deprived from something we sometimes take for granted: a tasty and nutritious meal special thanks to @laiyonelth for always trusting my vision and for making me part of spaces where I can communicate powerful messages through food and many thanks to my amazing team @mrmorfa @pvppychvlo_ by @111ncu
