SPICY SAUSAGE & GOAT’S CHEESE PASTA 🌶️

INGREDIENTS for 2
180g pasta
75g nduja (or spicy sausage)
goat’s cheese (however much you want)
1 onion, finely diced
1 bell pepper, diced
Two handfuls of spinach
Handful of leftover tomatoes or other vegetables
Olive oil, if needed

Sauce
1 tsp garlic paste
1–2 tsp chipotle paste
1½ tbsp tomato paste
1 tsp paprika
Salt and black pepper, to taste
Splash of pasta water

METHOD
1. Cook the pasta in salted boiling water. Before draining, reserve some pasta water.
2. Fry the onion in a large pan with a little olive oil over medium heat for 3–4 minutes until softened.
3. Add the sausage, breaking it up with a spoon.
4. Add the diced pepper and any other vegetables. Cook until softened.
5. In a mug stir in the garlic paste, tomato paste, chipotle, half the goat cheese, pasta water and paprika. Add to the pan and fry for 1–2 minutes to deepen the flavour.
6. Add the tomatoes and stir everything together to create a rich tomato sauce. If needed add more pasta water and make sure that the goat cheese melts on the pan. (Be careful with extra salt as nduja can be salty.)
7. Add the spinach. Stir until it begins to wilt.
8. Add drained pasta and stir until it is coated in the sauce.
9. Taste and adjust the seasoning. Add extra chipotle for heat or more pasta water if the sauce is too thick.
10. Serve with the remaining crumbled goat’s cheese.

TOP TIPS
If you can’t find Nduja, get any spicy sausage, chorizo or if you don’t like spice get regular sausage.
Start with ½–1 tsp of chipotle if you don’t want it too spicy.
A squeeze of lemon at the end helps balance the richness.
Mushrooms, courgette, cherry tomatoes and peppers all work brilliantly as leftover vegetables.

Experiment and enjoy!

We did two van conversions so trust us on that one - having underslung water tanks will save you so much space!

Initially we had a small 25L grey water tank under the sink that was a pain to empty and filled up quickly. Our fresh water tank was also inside the van.

We were apprehensive about outside water tanks as we were worried about their security and protection.

With the right insulation and instalment there is nothing to worry about. We used nuts & bolts, J-hooks and a lot of strap banding and they have not budged!

We highly recommend ⭐️⭐️⭐️⭐️⭐️

What a life we have built!

For a while something wasn’t quite right. The initial diagnosis was an injection pump failure, but since then the can has been to various mechanics and the verdict is different every time. We pray that we can figure it out because next year we are planning a massive trip around the world, however with how things are going …. Well we don’t know what to think. Our future heavily depends on this van…. This whole situation made us reflect, and we realise how much we owe to this van! #vanlife #campervan #vanconversion #diycamper #vantravel by @_ciarantravels

8 space saving tips for your campervan 🌅 Not only to maximise your living space and storage, but also to make it look cute!! ✨ Save this for your own van build ❤️ #VANLIFE #diycamper #selfbuildcamper #campervan #vanconversion by @_ciarantravels

This is our second van conversion, so trust us on these ones…
1. CCTV is a must have. Security is very important to us
2. This projector set up transformed our trips. As we are preparing for long term living in the van, this is a must
3. The Cerbo GX monitoring system is like the brains of the van - has everything in one place
4. Solenoid valve for the gas made it so convenient
5. Water sensor system connected to Cerbo GX
6. Dimmable LEDs, warm white of course. They make any evening magical
