Date and pistachio energy bites 🙌🏻✨ These are so yummy and are a perfect little sweet treat. Great when you’re craving chocolate with a crunch but want a healthier option! Recipe below.

Ingredients:
8 oz pitted medjool dates
1/2 cup rolled oats
1/4 cup flax meal
1 tbsp. Maple syrup
Dark chocolate chips (5 oz)
1 tbsp. Coconut oil
@keenanfarms no shell pistachios, finely chopped

Instructions:
1. Add pitted dates, oats, flax meal, and maple syrup to a food processor. Blend until combined and dates aren’t in chunks.
2. Heat dark chocolate chips with coconut oil in a microwave in 30 second increments. Stir between each 30 seconds to help melt the chocolate.
3. Roll date mixture into small sized balls and roll in the melted chocolate until coated. Best to add to a plate or Tupperware with parchment so the chocolate doesn’t stick after it has hardened.
4. Top with chopped pistachios and refrigerate. by @alyssakayle
