Black Velvet Marshmallows- no food coloring- delicious and ready to roast! by @artisanne_chocolatier

Modeling chocolate gets a bad rap. I make mine using my own couvertures and instead of glucose I use raw honey from my family’s beehives. It’s a little stickier to work with, but makes a better tasting product. I like using it for chocolate “seals” and my chocolate roses that turn into drinking chocolate. For the seals just warm the modeling chocolate in your hands and roll into balls. Press firmly with your stamp to the desired thickness. Lift off and voila. No freeze spray necessary. #chocolatetechniques #modelingchocolate #beantobar #chocolatemaker by @artisanne_chocolatier
