TACOSGIVING 2025 🌮🦃

I have to start this post with some shout outs, Thank you to my wife @lb4480 you continue to support my craziness, instead of asking me to scale it back a bit .. you egg me on ! Thank you to my 80yr old parents who just cant be stopped. My dad manning the fire was pure joy to watch. Mom flipping tortillas over hot coals and her Green Spaghetti was the talk of the night. @chefmez Thank you for the inspiration and support, I now understand the joy you get when you see … “ la gente chingandose los tacos !! “

This was my first time cooking over open fire at this scale and I think it went well. It was exhausting and a bit stressfull at times but we had a lot of help and we are grateful. Thank you to everyone who made the time and drive to make this happen.

Sunday dinner post !!

I had to adapt on this sunday cook. I was distracted by some garage beers and let my coals get a little low. I started off by wrapping the potatoes in foil and placed them directly in the coals while heating up the @lodgecastiron pan. Once the pan was hot, I finished off the potatoes with @kerrygoldusa butter and @kindersflavors The Blend. I then used the same pan to sear the american wagyu petite rib eye steaks. While the potatoes and steaks took a rest I was able to heat up another castiron pan and cook the shrimp with garlic powder, salt and lots of @kerrygoldusa butter. I though dinner was ruined but I was able to pull it off and get the timing just right. I think I did alright, what do you think ??
