Chicken ramen doesn’t have to be an afterthought. Done right, it’s one of the richest, most soul-satisfying bowls in the city — and one spot in East Village takes their chicken very seriously. 🍜
We’re back at @beshockramen, the East Village original that certified sake master Ayaka Ito (@sake.girl) and her team opened roughly a decade ago. Since 2016 they’ve built their name on lighter, cleaner broths and a sake program celebrated well beyond San Diego — the kind of place that keeps landing on best-of ramen lists for a reason.

Now they’re pouring that same obsession into their new paitan chicken, and it might be their best work yet. Here’s what makes it sing:

🐓 A homemade broth simmered low and slow all day, then whipped into that fluffy, creamy paitan texture Japan is famous for
🔥 A gently poached chicken breast, seared fast for a clean, tender finish
🍜 Noodles made with Hokkaido flour, cooked to the exact second for that signature chewy bite
🍶 A craft sake pour to complete the whole experience

Put it together and you get a bowl unlike anything else in town — rich and creamy, yet light and heartwarming at the same time. Easily one of my favorite new ramen in San Diego. 🙌
