Easy Cozy Chicken Noodle Soup (Rainy Day Favorite)

Ingredients
• ½ rotisserie chicken (Costco works great), shredded
• 2–3 medium carrots, diced
• ½ onion, diced
• 4 garlic cloves, minced
• 2 cartons (32 oz each) chicken broth
• ½ box (8 oz) pasta noodles of your choice
• 2 Tbsp tomato paste
• ½ cup heavy whipping cream
• 4–5 slices bacon, cooked & chopped
• 2–3 baby bok choy (or celery), chopped
• Olive oil
• Garlic salt & black pepper, to taste
• Italian seasoning, oregano, thyme (to taste)
• Cheese of your choice (I used shredded Mexican blend and it was still amazing!)

Instructions
1. In a large pot, heat a drizzle of olive oil. Sauté onions until softened, then add carrots.
2. Stir in tomato paste and cook for 1–2 minutes.
3. Pour in chicken broth and bring to a simmer.
4. Add shredded rotisserie chicken, then noodles. Cook until noodles are tender.
5. Stir in chopped bok choy and let it wilt.
6. Meanwhile, cook bacon in a separate pan until crispy. Chop and add to the soup.
7. Season with garlic salt, pepper, Italian seasoning, oregano, and thyme. Adjust to taste.
8. Stir in heavy cream for richness.
9. (Optional) Top with shredded cheese before serving.

Serve warm with crusty bread on the side perfect for cozy rainy days! 🌧️🍲✨

In my house it’s always been spooky over cozy, scary over cute. But this year I wanted to blend the two a touch of fall with a hint of Halloween vibes 🍁🕷️
