A look back in my chef journey. After 5 long years at Cheesecake Factory, my next stop was the incredible Tribe Street Kitchen, formerly in the river market of Kansas City.

Owned by and run by a good friend of mine Sam Hagan @whatsnext_kc, Tribe was a vibe an a hot spot for locals to experience delicious international cuisine.

One of the things I’m most proud of during this time is during the pandemic when times were tough on our industry, I was able to partner with @ourcornerstones to provide meals for at risk youth and shelters/homes during Covid shut down. Thanks to my friend @ceharrisisu.

Some of my best memories as a chef were working here and loved every minute of it and the staff (wish I would’ve taken more pictures of the team).

Many stops along the way, but a few more important than these couple years. by @bigbrennyskitchen

Excited to share my latest creations with my newest private chef client, Brian.

Braised Pork belly with root vegetables and cauliflower mash

Korean Beef Bulgogi with Togarashi jasmine rice and sautéed baby bok choy

Spicy Turkey chili with San Marzano tomato sauce

If you’re in the Coachella Valley and could use some home cooking for your distinct dietary restrictions, let’s get in touch and craft a menu together that makes you happy!

Test Kitchen Time!

Chicken salad has always been a favorite of mine, but while nostalgic and homey, it can use some SERIOUS kicking up! I decided to go to my local Asian market and get some ingredients that will help me your moms chicken salad into something entirely different! With kewpie Mayo as the base, I added celery, green onion, shallots, crispy garlic, french cornichons, chili oil, togarashi, deli mustard and soy sauce. The garlic, togarashi and chili oil gave it some great heat, but also allowed it to keep its chicken slaad coloring (worried gochujang would turn it too red). The crunch. The seasoning. The heat. It was a dream! I can’t wait to serve this at parties on crostinI! by @bigbrennyskitchen

Make your own poke bar. Chef brenny style! This is such a fun idea and I love doing it. Will be recreating this for a party later this week and I’m so excited. #privatechef #bigbrennyskitchen by @bigbrennyskitchen

I recently discovered the pork belly at Costco. Game changer. I hit up a local Asian market (Aj Filipino Market) for some enoki mushrooms and bok choy. I seared the pork belly first, to get some color and crisp, then I added some soy, ponzu and some fermented black bean sauce. A touch of garlic in chili oil for some heat and garnished with green onions. A quick tonkatsu miso ramen to pair with it and we’re off! Delicious!

Back at it again!

This party was the first thrown at my clients new house and wanted something special! Honey roasted tomato and goat cheese/mascarpone crostini, Lebanese chicken and smoked New York strip skewers, shisito peppers, pasta salad and a summer salad. Light and delicious food for a great evening!

Also… every party should have their own Moscow mule station!

🌺Hawaiian Heaven🌺

Recently catered a beautiful 50th birthday in Palm Springs (at Tom Sellecks brothers house no-less!) The menu was a Hawaiian macaroni salad. Chili lime shrimp skewers. Ahi Tuna Poke, coconut rice, sautéed zucchini, elote corn salad, and a beautiful summer salad. It was a blast!

Had a blast doing another meal prep for my great clients! The menu was chicken tortilla soup, bourbon brown sugar flank steaks, gochujang chicken thighs and grilled Italian sausage. For the sides I made honey roasted carrots with dill, roasted asparagus, veggie stir fry and brown rice! Totally different menu from last week and I’m super happy how it turned out! Really enjoying this new side to my business! @bigbrennyskitchen
