🥜🧀👀 Peanut Butter Cheez-It Bars

Ingredients:

* 1 (16 oz) bag of marshmallows
* 9 tablespoons unsalted butter
* ⅓ cup creamy peanut butter, plus extra for drizzling if desired
* 1 (21 oz) box Original Cheez-Its
* Mini chocolate chips

Instructions:

1. Line or grease a 9x9 pan. (You can use an 8x8 pan if you want thicker bars.)
2. Pour the Cheez-Its into a large bowl. Use your hands to lightly crush some of them, while leaving plenty whole. The smaller pieces help the bars hold together.
3. Melt the butter in a large saucepan over medium-low heat.
4. Add the marshmallows and stir occasionally until they’re completely melted and smooth, about 5 minutes.
5. Reduce the heat to low and add the ⅓ cup peanut butter. Stir until completely smooth and combined.
6. Add half of the Cheez-Its to the marshmallow mixture and stir until coated. Add the remaining Cheez-Its and mix again until everything is evenly coated.
7. Press the mixture firmly into your prepared pan.
8. Refrigerate for at least 20 minutes, then remove and slice into bars.
9. If you’d like, warm a little additional peanut butter and drizzle it over the top. Sprinkle with mini chocolate chips if desired.

No baking required!

🥕 Carrot Cake Cobbler

Caramel Pecan Filling:
• 3 eggs, room temperature
• 1½ cups corn syrup
• ¾ cup packed light brown sugar
• 2 tsp vanilla extract
• ¼ tsp cinnamon
• ⅛ tsp allspice
• ½ tsp kosher salt
• 2 cups chopped pecans

Carrot Cake Cobbler:
• 1½ cups all-purpose flour
• 1 Tbsp baking powder
• ½ cup sugar
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ⅛ tsp ground ginger
• ⅛ tsp ground cloves
• ½ tsp kosher salt
• 8 Tbsp cold unsalted butter
• ¾ cup whole milk
• 1 tsp vanilla extract
• 1½ cups finely shredded or ground carrots

Directions:
Preheat oven to 375°F and grease a 7x10 or 8x10 baking dish.

For the caramel pecan filling, mix together the corn syrup, brown sugar, vanilla, cinnamon, allspice and salt. Stir in the chopped pecans. In a separate bowl, lightly whisk the 3 eggs, then add them to the pecan mixture and stir until everything is well combined. Pour into the prepared baking dish.

For the carrot cake topping, combine the flour, baking powder, sugar, cinnamon, nutmeg, ginger, cloves and salt. Cut in the cold butter until the mixture is crumbly with small pieces of butter throughout.

Add the whole milk, vanilla and finely shredded carrots, stirring just until everything comes together. Spoon the carrot cake mixture evenly over the caramel pecan filling.

Bake at 375°F for about 45 minutes, until golden on top and bubbling around the edges.

Let rest for 10–15 minutes before serving. Serve warm with vanilla ice cream! 🍨🥕🤎
